5 nutritious salads for your lunch



    The next time you are hungry at midday, skip the usual and tuck into a healthy fix like a salad. It’s high on fiber and experts call it one of the “healthiest eating habits.” Green salads give you a powerful shot of antioxidants and vitamins and fruit salads improve the skin tone and boost your energy levels. EGG SALAD

If you love eggs, tuck into this one! Eggs are high-protein, low-carbohydrate and make for a healthy lunch fix. Just boil eggs, cube them then add onions and mayo plus celery. You can also add a reduced-calorie mayonnaise and chives to make it healthy. Have the salad on fresh lettuce or in a sandwich, it will fill you up for sure.

Best had with: Crusty bread.

MOROCCAN CARROT SALAD

Sweet and spicy, this salad makes for a good side dish. Simply whisk some spicy harissa in a bowl with lemon juice. Add in a little olive oil and seasoning. Now add in some julienned carrots or carrots cut into circles. Add raisins, mint leaves and feta cheese. Mix. Can serve chilled or at room temperature.

Best had with: Grilled fish

CREAMY POTATO SALAD

A potato salad with a creamy dressing is always a winner. To make, boil potatoes, chill and then cube them. In a bowl mix some mayonnaise, cream, lemon juice, green onions, celery, a little mustard and mint. Add chopped cucumber and the potatoes to this. Season with salt and pepper.

Best had with: Spicy curry

    MELON CUCUMBER RADISH SALAD

    
Always a winner, owing to its ingredients, this

    combo of fruit and vegetables is very healthy. Use

    a honey dressing for added flavour.

    Best had with: Cold meats.

ASIAN CHICKEN SALAD

Full of chicken salad has a delicious tangy flavour. Boil chicken and marinate with soy ginger sauce for half an hour. Toss this chicken with some oranges, spring onions, chopped romaine lettuce leaves and julienned purple cabbage in a bowl. Add snow peas to this. Season with salt and pepper.

Best had with: Noodles

QUICK-FIX DRESSING: LEMON CHILLI VINAIGRETTE

Make this dressing with sliced ginger, olive oil, mustard, lime juice and honey as well as some bird's eye chilli. Mix it together. Chill.
